A toast to San Diego's first reclaimed water beer!
Beer made from airport water is not something you see every day at an airport. San Diego International Airport (SAN) and East Village Brewing Company collaborated today to release two beers made with purified condensate collected through the airport's water management program. Pre-Flight Pils is a German-style pilsner with flavors of toasted bread, lemon zest, and grapefruit. A limited supply of the beers will be available soon at San Diego International Airport Terminal 2 and The East Village Brewing Company.
At SAN, the beer is brewed with condensate from the air conditioning units attached to jet bridges. A reverse osmosis process and ozone disinfection were used to purify the captured condensate before its transport to The East Village Brewing Company. Condensate water is a pure water profile with little mineral content, making it ideal for brewing. Additionally, the water is used to clean SAN equipment and vehicles and to heat the terminals by cooling the cooling towers.
While working at another local brewery, The East Village Brewing Company first brewed a beer using condensate from SAN Test Pilot, said Kimberly Becker, San Diego County Regional Airport Authority President and CEO. As a result, the beer sold out almost immediately, and we've been trying to collaborate again since then. Our focus on sustainability aligns with the East Village Brewing Company's and we appreciate the opportunity to showcase this reclaimed water in an innovative manner with their help. Our brewer, Aaron Justus, states that community, healthy ingredients, and sustainability are the core values of our brewery. All three boxes are checked in this collaboration. The opportunity to partner again with airport, a pillar of our community filled with passionate and fun individuals, is great. Brewing is made easy with superbly pure condensate water. In addition, California has been experiencing long-term droughts, so water reclamation is an effective solution for reducing our water footprint.
In addition to ensuring the environmental impact of its operations and brewing practices, East Village Brewing Company also focuses on its final products. As an example, hops and malt ingredients are sourced from farms certified under Global GAP and Salmon Safe, and the company provides distributing their spent grain to local farms for cattle and pigs, and sourcing all raw materials from companies located on the West Coast of the U.S. Moreover, the heat exchanger recycles all water used for cleaning and brewing, the all lights are low energy LED and have either timers or motion sensors, and cleaning products and soaps in the tasting room and bathroom are environmentally friendly. Using any type of single-use plastic or paper is not permitted at the brewery.

In San Diego International Airport, we collected air conditioner condensate to brew Hoppy Travels. This beer's water is extremely soft and clean, allowing it to finish pleasantly dry. To create a textured flavor and aroma, El Dorado, Mosaic, and Citra hops were used throughout the brewing process. You can immediately smell citrus and tropical fruits. There is a predominant note of pithy grapefruit and ripe guava on the palate. A West Coast IPA has a bitter, dry, and resinous finish. Its a delight to drink!

We brewed Preflight Pils with water collected from the air conditioning condensate in San Diego International Airport terminals. Low mineral content makes this water perfect for lagers. The Pilsner's traditional soft-bready flavors are provided by Admiral Maltings in Alameda, CA. A subtle blend of citrus notes and floral undertones characterize Saaz hops from Bonners Ferry, Idaho's Elk Mountain Farms. A sharp bite up front, followed by a crisp, dry, and clean finish is sure to delight beer drinkers.
