Cheers to San Diego's reclaimed water beer!
A beer made from airport water isn't released every day at an airport, but it's a rare occasion. San Diego International Airport (SAN) and East Village Brewing Company collaborated today to release two beers made with purified condensate collected through the airport's water management program. Hoppy Travels IPA is a West Coast IPA with grapefruit and guava notes, while Pre-Flight Pils is a German-style pilsner with hints of bread and lemon zest. San Diego International Airports Terminal 2 will begin distributing the beers in the coming weeks. Currently, they are available at The East Village Brewing Company.
Beers at SAN are made from condensate from air conditioning units attached to jet bridges. Using reverse osmosis and ozone disinfection, the captured condensate was purified and transported to The East Village Brewing Company. Due to its low mineral content, the reclaimed water is ideal for brewing due to its pure water profile. As well as making beer at SAN, the water is used to clean equipment and vehicles, as well as to control the temperature in the terminals.
Our first partnership was with The East Village Brewing Company in 2019, when they brewed a beer called SAN Test Pilot using the condensate from another local brewery, explained Kimberly Becker, president & CEO of the San Diego County Regional Airport Authority. Our first collaboration was very successful, selling out almost immediately, and we've been interested in doing so again in the future. Having the East Village Brewing Company help us showcase this reclaimed water creatively aligns with our efforts at the airport and we are excited to work with them. Brewing can be done with the superbly pure condensate water that is obtained from the condenser. Moreover, California has been experiencing a long-term drought, so water reclamation is a creative way to minimize our water footprint.
With a focus on sustainability, the East Village Brewing Company ensures that its brewing practices, final products, and operations are environmentally friendly. It is possible to source hops and malt ingredients from farms certified to Global GAP and Salmon Safe, and to provide giving their spent grain to local farms for pig and cow feed, and sourcing all raw materials from companies located on the West Coast of the U.S. As well, the heat exchanger uses reclaimed water to clean and brew. The the lights are LEDs that are controlled by timers or motion sensors, and and cleaning products and soaps in the tasting room and bathroom are environmentally friendly. It uses no plastic or paper and does not use shrink wrap.

In San Diego International Airport, we collected air conditioner condensate to brew Hoppy Travels. This beer's water is extremely soft and clean, allowing it to finish pleasantly dry. This beer was brewed with El Dorado, Mosaic, and Citra hops. An immediate bouquet of citrus fruits and tropical fruits greets the nose. Its palate is dominated by notes of pithy grapefruit and ripe guava. West Coast IPAs are known for their bitter, dry, resinous finish. Its a delight to drink!
Pre-Flight Pilsner:
Style: German-style Pilsner
The ABV was 57%, the IBU was 40, and the SRM was 2.
There is a fresh bread aroma, lemon flavor, and apricot flavor.

Brewers Beer Description:
Air conditioner condensate collected at San Diego International Airport was used to make Preflight Pils. Beer’s taste is enhanced by the water’s low mineral content, making it perfect for lagers. The traditional soft-bready taste of Pilsner is provided by Admiral Maltings in Alameda, CA. Elk Mountain Farms in Bonners Ferry, ID grows Saaz hops that are delicate and floral. As this beer comes across sharp and dry up front, but finishes crisp, dry, and clean, it will delight beer drinkers of all kinds.
